Simple Recipe for a Pot Luck Party
It never fails that I am having a super busy day followed by a Pot Luck dinner or party. You know how it is, you’ve already put in 2 days worth of activities today and now it’s practically time to walk out the door and you suddenly remember this invitation is “POT LUCK”….and there is no time to go to the store or to cook! So, if you find yourself providing “take out” at your next social, here’s a “not to be missed recipe”. Not only is it fast and EZ, it’s all FOUR ingredients are things you can keep on hand in the pantry!Besides, if you wanted to cook you’d stay home, right? So, it’s time for a SMARTcut(R) recipe!
Get over needing to carry out a gourmet, expensive, labor intensive dish to impress people. Now, don’t get me wrong, I want my contribution to be well received, but I am not against finding a simple solution. Here’s mine:
Spicy Crackers
(for lack of a jazzier name)
Mix oil and spices together in bowl or measuring cup & set aside.
(I use my 2 cup measuring cup for the oil/spice mix so I don’t have another dish to wash)
1 cup Canola Oil
1 package of dry Ranch dressing mix
3 teaspoons Red Pepper Flakes
Put 3 tubes of (Nabisco)Multi-Grain saltine crackers into a large zip closure bag. Pour oil/spice mix over crackers, zip bag and shake ‘em up. “Ta da! You are DONE!!”
Oh, and I should mention it makes a BIG batch. I carry the zip bag of crackers in a large salad bowl to the party. Once there, I dump them into the pretty bowl. No fuss, no muss, but plenty of compliments!!

Besides the backlog of work created from an unscheduled week of “vacation,” there was undoubtedly a significant amount of unexpected cost involved. For an entrepreneur, that lost time can show up as lost income. That makes for a real “double whammy!”
